Our festive menu, served over four plates. It opens with a crispy turkey and sage croquette and a glass of Charles Heidsieck. Butter-seared scallop follows, with brown butter, pumpkin, apple and pecan. Then the centrepiece: roasted turkey breast and confit leg with sweet potato, Brussels sprouts, glazed carrot, cranberry and bourbon gravy. To finish, Pumpkin Pie 2.0, taken apart and rebuilt as pumpkin ice cream with salted caramel and ginger.

Our sommelier has paired every course, from Champagne and white Burgundy to a Willamette Valley Pinot Noir and a 20-year-old tawny port.
